Low-Fat Exotic Chicken Salad

Low-Fat Exotic Chicken Salad

1/2 C. [tag]reduced-fat[/tag] mayonnaise
2 tsp. [tag]mustard[/tag]
2 C. chopped cooked [tag]chicken[/tag]
1/2 C. chopped [tag]celery[/tag]
1/2 C. chopped [tag]mushrooms[/tag]
1/4 C. chopped green [tag]bell pepper[/tag]
20 oz. can [tag]pineapple chunks[/tag] in juice, drained
1 C. red seedless [tag]grapes[/tag], halved
11 oz. can. [tag]mandarin oranges[/tag], drained
1/4 tsp. salt
1/4 tsp. pepper
Garnish: 1/3 C. sliced [tag]almonds[/tag], toasted/green leafy lettuce/croutons

Mix mayonnaise and mustard with chicken in large bowl. Add vegetables
and mix well; chill. Before serving, add fruit and gently mix. Garnish
as desired. Makes 8 servings.
