Black Eyed Peas
New Years Day, and I have to have my black eye peas for luck. Southern thing, my mother has done it forever.
No one here likes them but me. I like them in all forms, but fresh is my preference.
Fresh blackeyed peas are completely different from frozen or canned. Usually, I would make a pot of hoppin john, but the way I like it isn’t exactly low fat, so I skipped that.
So, this is what I did.
I got a can of black eyed peas
1 can of Rotel tomatoes
Mixed the whole thing together after draining all the juice off of everything.
Added a splash or 2 of balsamic vinegar.
It ain’t bad. If you’re not into spicy, you might want to choose mild Rotel tomatoes, or even a mild salsa.
