1 teaspoon olive oil
1 onion — cut in chunks
1 red bell pepper — cut into chunks
1 green bell pepper — cut into chunks
4 skinless boneless chicken breast — cut into cubes
1 8 oz. package mushrooms — sliced
1 28 oz. can crushed tomatoes
1 28 oz. can tomato sauce
2 tablespoons italian seasoning
pinch salt and pepper
1. Saute chicken in olive oil until chicken is lightly browned in a medium
sized pot. Add onion, peppers and mushrooms; continue sauteing until
veggies begin to soften. Add tomato sauce and crushed tomatoes, salt and
pepper and Italian seasoning.
2. Stir, cover and simmer on low heat for 45 minutes to an hour.
