Green Callaloo

Callaloo – a thick soup of crabmeat, greens, and various seasonings
(why is the song Babaloo going thru my head?)

1 pound callaloo leaves or spinach or swiss chard
12 small okras, tops removed and discarded, sliced crosswise
1 rib celery, chopped
4 scallions, chopped
2 sprigs parsley, chopped
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
1/2 teaspoon red pepper flakes
1 quart water
1/2 pound cooked crab meat

Sort through and discard any greens that are yellow or wilted. Thoroughly rinse greens in cold water; drain. Roll up and cut leaves crosswise into 1-inch widths. In large kettle or Dutch oven, combine all ingredients. Bring to boil; reduce heat. Cover and simmer until vegetables are tender and ingredients blended, about 10 minutes.

Makes 4 servings.
