Low-Fat Exotic Chicken Salad

1/2 C. mayonnaise
2 tsp.
2 C. chopped cooked
1/2 C. chopped
1/2 C. chopped
1/4 C. chopped green
20 oz. can in juice, drained
1 C. red seedless , halved
11 oz. can. , drained
1/4 tsp. salt
1/4 tsp. pepper
Garnish: 1/3 C. sliced , toasted/green leafy lettuce/croutons

Mix mayonnaise and mustard with chicken in large bowl. Add vegetables
and mix well; chill. Before serving, add fruit and gently mix. Garnish
as desired. Makes 8 servings.
