Sweet And Sour Chicken Saute

1 garlic clove finely chopped
1 tbsp olive oil
6 skinless boneless chicken breasts
1 each green pepper, red pepper, and yellow pepper cut into bite size
pieces (or use your favorite colors!)
1 large zucchini, chopped
1 large yellow summer squash, chopped
1 1/2 cups cubed fresh pineapple
1/2 cup pineapple juice
2 tsp chopped fresh basil
1 tsp salt
1/2 tsp cayenne pepper

Cook garlic in oil, 1 min. add chicken and brown over medium high
heat. Add peppers, zucchini and squash and pineapple to skillet.

Combine pineapple juice, basil, salt and cayenne. Pour over chicken
and vegetables. Bring to boil; reduce heat. Cover and simmer about
20 minutes or until chicken is tender and no longer pink, stirring
occasionally.

Serve over brown rice
