Chicken Tomato Pasta

Chicken Tomato Pasta

Note: This recipe is great for those who are [tag]lactose intolerance[/tag] or who want to limit their dairy intake for any reason.

18 oz. [tag]chicken breast[/tag], cut into small pieces (1/2″ square)
1/2 c. [tag]onion[/tag], diced
2 cloves [tag] garli[/tag]c, minced
2 cans (14.5 oz.) of [tag]diced tomato[/tag]
1 1/2 c. sliced [tag]mushrooms[/tag]
1/3 c. [tag]balsamic vinegar[/tag]
1 tsp. [tag]basil[/tag]
1 tsp. [tag]oregano[/tag]
1/2 tsp. [tag]thyme[/tag]
1/2 tsp. [tag] rosemary[/tag]
1/4 c. [tag]tomato paste[/tag]
cooking spray
3 1/3 c. cooked [tag]whole wheat pasta [/tag]

Instructions:

Spray skillet with nonstick cooking spray. Saut? onion, garlic and mushrooms for approximately 5 minutes over low heat. Add raw chicken pieces. Cook chicken over medium high heat until no longer pink. Once chicken is cooked, add tomatoes, paste, balsamic vinegar, and spices to the mixture. Mix together and simmer over medium low heat for 20 minutes.

Serve with a side of garlic bread and your favorite vegetable.
