Vegetable Pita Sandwich

This could be a for a low fat diet or the You on a Diet meal. And use a bit of Tomato Vinaigrette for dressing.

Vegetable Pita Sandwich

1 cup [tag]broccoli[/tag] florets
1 cup [tag]cauliflower[/tag] florets
1 cup sliced [tag]carrots[/tag]
1 cup sliced [tag]mushrooms[/tag]
1/2 cup sliced [tag]celery[/tag]
1 medium red [tag]onion[/tag], thinly sliced and separated into rings
2 teaspoons dried [tag]savory
4 [tag]whole wheat[/tag] [tag]pitas[/tag]
1 cup low fat [tag]cheddar cheese[/tag]

Chop broccoli and cauliflower into small pieces. Combine broccoli, cauliflower and carrots and steam until crisp-tender.

Add celery, mushrooms, onion and savory and mix well. Steam a couple more minutes until celery and mushrooms are soft.

Cut the pita breads in half and gently separate the sides. Divide the vegetable mixture and cheese evenly between the pita halves.

Spray a large nonstick skillet and heat over medium heat until hot. Place the filled pita breads in the skillet being careful to keep vegetables and cheese from falling out. Heat until cheese melts and pita breads begin to get crisp.

Makes 4 Servings
