1/2 C. reduced-fat mayonnaise
2 tsp. mustard
2 C. chopped cooked chicken
1/2 C. chopped celery
1/2 C. chopped mushrooms
1/4 C. chopped green bell pepper
20 oz. can pineapple chunks in juice, drained
1 C. red seedless grapes, halved
11 oz. can. mandarin oranges, drained
1/4 tsp. salt
1/4 tsp. pepper
Garnish: 1/3 C. sliced almonds, toasted/green leafy lettuce/croutons
Mix mayonnaise and mustard with chicken in large bowl. Add vegetables
and mix well; chill. Before serving, add fruit and gently mix. Garnish
as desired. Makes 8 servings.
