
Spanish Rice or something similar.
Made something really good for dinner. It was a quick, spur of the moment thing. It reminded me of what my mom used to make when I was a kid. It’s fat free, whole food, plant based.
1 good sized garlic glove, chopped
1/2 chopped orange pepper
1/2 chopped onion
1 can fire-roasted tomatoes with garlic
Vegetable broth or water as needed.
1 cup brown rice
Goya Sazon – 2 packets
Dry fried the garlic until it was brown. I didn’t mean for it to brown so much, but it worked out well. Then I put the onions and pepper in the pan with a little vegetable broth and cooked until soft. Added the whole can of tomatoes, water and all and let it cook down.
When it was done, I put it over rice. It was really good. It reminded me of my mom’s spanish rice.
You can use brown rice, or any grain or pasta of your choosing.
