Making Black Bean Soup…..Again.
The truth of the matter is, I love the stuff. Not only are beans economical, they go a long way. They have loads of protein – when I eat beans, I lose my craving for meat – I don’t even miss it. They fill you up quickly. They naturally have no fat, and have lots of fiber. I’m big on fiber.
Unfortunately, butter beans, black beans and kidney beans are the only beans other family members will eat. God forbid I should make a pot of lentil soup – which I adore – but you would think I was trying to poison everybody if I ask them to try it.
The pot of black bean soup I made tonight came out great. I put in garlic, onions, bell pepper, salt, pepper and cilantro. Yum!
