Salsa Marinated Chicken
1 1/2 cups good-quality prepared salsa
2 tablespoons no-salt-added tomato paste
4 skinless, boneless chicken breast halves (about 1 pound total)
1 green bell pepper, cut into thin strips
2/3 cup frozen corn kernels, thawed
3 tablespoons finely chopped scallion
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro or parsley
Preheat the broiler or prepare the grill. In a shallow bowl, combine 1/2 cup
of the salsa and the tomato paste and stir to blend. Add the chicken, turn
to coat, and let stand while you prepare the vegetable salsa.
In a medium bowl, combine the remaining 1 cup salsa, the bell pepper, corn
scallion, lime juice, and cilantro.
Broil or grill the chicken 4 inches from the heat for about 4 minutes per
side, or until chicken is just cooked through. Place the chicken on 4
plates, spoon the vegetable salsa on the side and serve.
