Cabbage Salsa
1 small head of cabbage, finely shredded
Juice of one orange
Juice of one lime
1-teaspoon salt
1-teaspoon sugar
1-tablespoon tequila
1 ripe plum tomato, finely diced*
1-2 tablespoons pickled jalapeño, finely diced
1 tablespoon olive oil
Put shredded cabbage in glass bowl. Mix orange juice, lime juice, salt,
sugar and tequila and pour over cabbage, tossing to combine. Stir in tomato
and jalapeño and mix lightly.
Cover and let stand in refrigerator for 30 minutes before serving.
* Substitute orange for tomato for a different flavor – 1 orange, peeled,
white membranes and seeds removed, finely diced
