Skinny Mashed Potatoes
5 large potatoes, cut in 1-inch pieces
3 1/2 cups chicken broth, divided
1/2 tsp white pepper or to taste
Place potatoes and 2 1/4 cups broth in large saucepan. Boil on high and reduce to medium. Cover, cook 10 minutes or until potatoes are tender and drain, but reserve broth. Mash potatoes with 1 1/4 cups broth and pepper until desired consistency is reached. Add more broth if needed.
